How to Use Himalayan Salt in Cooking: A Practical Guide

Matching Grind to Task

Himalayan salt’s culinary versatility comes from its range of grinds, each suited to a different job. Refined (suji) dissolves fastest and is best for baking and general seasoning where you want even distribution. Granular (1–2 mm) is the everyday table and cooking grade. Coarse (2–5 mm) is built for grinders, brining, and grilling, where the larger crystal dissolves more slowly and delivers bursts of salinity rather than an even coat.

Brining and Curing

Coarse salt is the standard choice for wet and dry brines — it dissolves at a controlled rate in a brine solution and is easy to measure by volume for dry-curing meats and fish. Because our salt carries no anti-caking agents, it dissolves cleanly without the cloudiness some processed salts leave in a brine.

Cooking on a Salt Slab

A salt cooking slab can be used hot or cold. For hot cooking, warm the slab gradually in an oven or on a grill (never go straight to high heat — thermal shock can crack the slab) until it reaches 400–500°F, then sear thin cuts of meat, seafood, or vegetables directly on the surface for a light, even salt crust. For cold service, chill the slab in a refrigerator and use it to plate sushi, cheese, or charcuterie, which gently seasons the food resting on it.

Finishing and Presentation

A few flakes of coarse salt crushed by hand over a finished dish — steak, roasted vegetables, chocolate desserts — gives a textural, visual finish that ground table salt cannot match. This "finishing salt" use is where the pink color and crystal structure genuinely earn their place on a plate rather than disappearing into the dish.

Storage Tip

Because Himalayan salt is hygroscopic, keep it in a sealed container away from steam and humidity — a lidded jar near the stove is more practical than an open dish, which will clump in a humid kitchen.
